Golden Quinoa Pilaf w/Tart Cherries

A pilaf to please everyone-it's a little sweet, a little tart, and a little savory. Quinoa is another great source of soluble fiber; spinach provides beta-carotene and vitamin C; and ginger, tumeric and cherries all contain anti-inflammatory compounds.

1 Tbls coconut oil
1 piece fresh ginger, peeled & grated (substitute ginger crystals/powder)
1 tsp ground tumeric

1/4 tsp ground coriander
1/4 tsp ground cumin


1 cup golden quinoa, well washed & drained

1 1/2 cups water

1/4 cup dried tart cherries, chopped
1 cup chopped spinach leaves

1/2 cup thinly sliced green onions

1/4 cup fresh lime juice

1/2 cup cashews, lightly toasted & chopped

 

 

1. In medium pot, stir coconut oil, ginger, tumeric, cumin and coriander over medium-high heat until fragrant.

2. Add quinoa and stir to coat. Add water, bring to boil and then reduce heat. Cover and simmer 15 minutes, or until all water is absorbed. Remove from heat; leave covered 5 minutes.

3. Stir in cherries, spinach, green oins, and lime juice. Season to taste with salt and pepper, sprinkle with cashews and serve.
